the Production of Macaroni

 

To produce macaroni, wheat is transformed into semolina, mixed with water and formed. The situation valid for the production of macaroni is so different from bread wheat. The rates of protein and vitamin B are very higher. Since macaroni is from the group of complex carbohydrate, it rapidly turns into energy by being broken down in metabolism. The reason why macaroni is food that can be easily digested is it.

The Production of Macaroni in Turkey

 

The production of macaroni in Turkey, as industry, started in 1922. With the increase in production of macaroni factories in 1980s, it became 5th among the countries that produce macaroni in the world.

40% of production capacity is located at Gaziantep, 35% of it is located at Central Anatolian Region and 25% of it is located at Aegean Region in Turkey. The most determinant factor for the quality of macaroni is high thermal technology. Production is done in Turkey through this technology.

Turkey is the country that has the most export after Italy in the world, however consumption is not sufficient. Because of decline in consumption, production cannot show an increase. While 27-30 kg of consumption is in Italy, 8,5-9,5 kg of consumption is in Greece, 6,5-7,5 kg of consumption is in Egypt and 7-8 kg of consumption is in Portugal per capita, it is determined that the consumption in Turkey is 6 kg. (According to data from Macaroni Industrialists’ Association) One of the reasons for low consumption is that macaroni is complementary food, not main food, in Turkish culture.
